Bourbon Orange Pecan Pie, All Seasons Fredericksburg Texas

I had some fantastic guests stay with us this weekend and I happened to walk through the courtyard while they were talking about the pie they had that afternoon. Small world, I started Fredericksburg Pie Company 6 years ago and they were talking about my Bourbon Orange Pecan Pie. It’s the one that put us on the map. I’ve since sold the Pie Company, but they are still using many of the same recipes and I’m always glad to hear someone say they enjoyed it. I thought I would share this recipe.

Bourbon Orange Pecan Pie
Pre-heat Oven to 350
Ingredients:
1 ¼ cup Packed Golden Brown Sugar
1 ¼ cup Light Corn Syrup
¾ Stick Unsalted Butter, melted
4 Large Eggs
3 tbs Bourbon
1 tbs Grated Orange Peel
1 ¼ tsp Vanilla Extract
¼ tsp Salt
1 ½ cups Pecan Halves

Whisk brown sugar, corn syrup and melted butter in large bowl to blend. Whisk in eggs 1 at a time. Stir in Bourbon, Grated Orange Peel, Vanilla and Salt. Place Pecans in bottom of pan and cover with filling.
Oven Temperature: 350°

Pie Crust: Unbaked – no holes

Bake Time: Bake uncovered for 35 minutes. Cover with Foil and Bake for an additional 20 – 30 minutes. Top should be puffed and cracking a little. When you gently shake it, it should move a little.

Enjoy,
Joe

Fredericksburg Texas Wild Flowers in Bloom

Spring in the Texas Hill Country is shaping up to be fantastic this year. We have had just enough rain that everything is lush and green and now the wild flowers are popping out. Blue Bonnets are starting to line the roads and the Willow City Loop as always is beautiful. This year could be the best wild flower year in a while. It’s gorgeous and sunny in Fredericksburg today.

Fasching, Fredericksburg Texas, All Seasons Fredericksburg

Fasching is coming back to Fredericksburg, Texas and in a big way. If you’re asking yourself “what is Fasching?”, don’t worry, it’s our number one question. Fasching is Geman Mardi Gras or Carnival. It’s a huge festival every year that celebrates the festive season right before lent. There will be two Fasching events held this year to celebrate the week leading up to Shrove or Fat Tuesday. On February 11th, we have the Fest Nacht Party. Fest Nacht is a hugely fun night filled with decorated tables, costumes and lots of dancing. The theme this year is Vegas Baby! For more information, see the Fest Nacht website at Fest Nacht.

On February 18th, we have the first annual Fasching Ball. This is the Masquerade Ball of all time. The theme this year is Winter Karneval and we will be transforming the Hanagar Hotel Ball Room into a magical winter wonderland with over the top food, martini bars and cigar lounges, just to name a few exciting hints. You don’t want to miss this inaugural event! Tickets are $150 per person or Tables of 8 are $2800. Tables are extremely limited already. You can buy tickets on the website at Fasching Fredericksburg.

Fredericksburg Texas Restaurants

The number one question every week is “where should we have dinner?”. I’ve created a Google Map showing all of my favorite spots. Check it out, read the reviews and let me know which Fredericksburg restaurant is your favorite. Of course I have to mention that All Seasons Downtown Retreat is within walking distance of many of the fantastic restaurants.
Happy Eating!
